Sushi Lab is a New York born innovative concept focused on the dining experience and its unique take on traditional Japanese cuisine. Sushi Lab began as an 8-seat counter bar in the hotel lobby of the Sanctuary Hotel New York. The concept was to provide a unique dining experience where everything was created right before your eyes and visitors from all over the world could enjoy every-day sushi. The dining options have since expanded and tailored to sushi lovers of all kinds.

Located in the East Village, Sushi Lab takes your omakase experience to a new neighborhood. Enjoy our unique omakase creations as you dine in our intimate new location.

Private Dining and Events

For private events Sushi Lab offers unique spaces that are distinct from one another. Both the Sushi Lab Rooftop and the Chemistry Room features a 10-seat chef’s counter for bespoke dining experiences. Each venue can be configured and tailored to the specific needs of your event. Our team is committed to curating the perfect event for your occasion; from corporate events, holiday parties, engagement dinners. Our innovative take on Japanese cuisine offers a wide range of culinary possibilities.

The Chemistry Room

The newly opened Chemistry Room by Sushi Lab features a brand new 13-course (tasting menu) for $125 per person. Guest will enjoy an up-close and intimate indoor dining experience, where fresh seasonal ingredients are used to curate a mouth-watering and innovative omakase that will leave you wanting more.
